Chili

Ingredients:
3 lbs Ground Beef
1 cup chopped white onion
2 stalks of celery, chopped
3 Beef Bouillon cubes
2 Large cans of Tomato Soup
2 cans of Kidney Beans (I used light and dark)
2 1/2 cups of cooked spaghetti (not the long noodles - the short ones like macaroni)
Sugar, Chili Powder and Pepper to taste

Toppings/Sides:
Cheddar cheese shredded
Saltine Crackers

Brown ground beef in stock pot. I like to add some Chili Powder at this point to "cook" it into the meat.

In a second pot, bring water to a boil and add macaroni. Chop onion and celery into small pieces. I have to remember to make my celery super duper small of I hear about it.

Add onion and celery to ground beef.

Add beans into ground beef, onion, and celery.

Once noodles have cooked, rinse them in cold water to stop the cooking process. (If you forget to do this they will turn to mush much sooner.) Add the tomato soup and 2 cans of water to the stockpot. Let chili come to a boil then serve.

Plain chili.

This recipe was originally my Mom's. I've slowly but surely given it my own twist.

Bacon Chicken

Ingredients:
6 slices bacon
1 Tbsp. butter
1 Tbsp. olive oil
6 boneless, skinless chicken breasts (I only had four... but whatever!)
1 onion, chopped
3 cloves garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
1 and 1/2 cups shredded cheddar cheese

Cook bacon in 12" skillet until crisp, about 4-6 minutes. Crumble bacon and set aside.

Pour bacon grease out of skillet, but don't wash or wipe it. Add butter and olive oil to skillet. Saute chicken breasts in this mixture over medium heat, until chicken is cooked and no longer pink in center.

Place chicken in ungreased 12x8" baking dish.

Cook onion and garlic in drippings remaining in skillet. Cook until onion is softened, then stir in salt, pepper, and cooked bacon.

Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted.

Both the hubby and I loved this dish! We will be making it again. It was VERY tasty and flavorful. I used Maple flavored bacon and that may have added a little bit more flavor. I maybe would like to try adding mushrooms or a white cheese like swiss or pepper jack.
